The Fulton Table was created by chefs, and food remains at the center of every gathering. Menus are developed and prepared by our team with the same care and attention found in the best kitchens, guided by season, ingredient, and occasion.
Rather than fixed offerings, each menu takes shape through the ingredients of the moment and the character of the gathering itself. The kitchen works closely with hosts to shape a meal that fits the table and the people gathered around it.
Some gatherings take shape around a seated meal shared at the table. Others unfold through passed dishes or chef stations that allow guests to move comfortably through the room. Regardless of format, the approach remains consistent.

THE SPACE
The Fulton Table is set within one of Fulton Market’s original loft buildings, where brick, steel, and open volume define the character of the room. By day, natural light moves across the space and gathers around the people inside it. In the evening, candlelight brings warmth and depth to the architecture.
The scale of the loft allows each gathering to take shape comfortably, while the material warmth keeps the room grounded and welcoming. The room adapts easily to each gathering, whether guests arrive for a midday meeting or settle in together for dinner.

Capacity & Layout
The Fulton Table is designed for gatherings that remain personal and connected. The room comfortably hosts events of approximately 20 to 100 guests, depending on the style of the gathering. Many events center around shared dining tables that encourage conversation and bring guests together in a single room. Other gatherings allow guests to move comfortably through the space with standing receptions, chef stations, or a combination of seated and mingling areas.
The layout of the room remains flexible so each gathering can take shape in the way that best suits the occasion.
THE CHEFS
The Fulton Table was created and is led by chefs. It exists from the belief that a meal, properly composed and properly served, has the ability to gather people in a way nothing else can.
Chefs Mark Chmielewski and Kieran Ronayne guide the culinary direction of The Fulton Table. Their work reflects the same philosophy that shaped the space itself: thoughtful cooking, careful preparation, and hospitality that allows guests to settle comfortably into the experience of the gathering.
MARK CHMIELEWSKI
Chef Mark Chmielewski is the co-founder and executive chef behind The Fulton Table. With more than three decades of culinary experience, his career reflects a combination of classical training, restaurant leadership, and large-scale hospitality production.
Mark began his culinary career in Connecticut before attending the Culinary Institute of America, where he received formal training rooted in classical technique and kitchen discipline.
Following culinary school, Mark spent several years working in New York City kitchens, contributing to restaurant concepts connected to chef David Burke, where he developed a strong foundation in modern American cuisine and high-level restaurant operations.
After relocating to Chicago, Mark built a long career in the city’s restaurant and hospitality community. His experience includes roles in respected kitchens such as Blue Water Grill and The Gage, both known for their commitment to seasonal ingredients and thoughtful hospitality.
Mark also spent years involved with Wolfgang Puck Catering, contributing to culinary programs connected to the Museum of Contemporary Art Chicago and major Chicago venues including the United Center.
In addition to his restaurant work, Mark is the owner of Toque Boutique Catering, a Chicago-based catering company known for high-end, fully customized dining experiences. Through this work he has produced events ranging from intimate private dinners to large-scale celebrations across the city.
The Fulton Table reflects the culmination of that experience. As a chef-owned dining and event space in Chicago’s Fulton Market district, it allows Mark to focus on what he values most about hospitality: creating memorable gatherings where exceptional food and meaningful connection share the same table.
KIERAN RONAYNE
Chef Kieran Ronayne is a chef partner at The Fulton Table and a co-owner of Toque Boutique Catering, a Chicago-based catering company known for high-end, fully customized dining experiences.
Kieran received his culinary training at the Cooking and Hospitality Institute of Chicago, where he developed a strong technical foundation and disciplined approach to professional kitchen work.
Early in his career, Kieran was part of the opening culinary team at Green Dolphin Street, working alongside Chef Victor Gechrit and gaining experience in a high-energy Chicago kitchen.
He later served as Executive Sous Chef in the catering division at Food For Thought Catering, where he oversaw kitchen operations for large-scale events and refined his expertise in event-driven hospitality.
Kieran eventually joined Wolfgang Puck Catering at the Museum of Contemporary Art Chicago, where he worked alongside Chef Mark Chmielewski. Their collaboration in that environment helped establish the professional partnership that ultimately led to both Toque Boutique Catering and The Fulton Table.
His culinary career has also included international kitchen experience in France, Vietnam’s Mekong Delta, Casablanca, and Thailand, experiences that broadened his understanding of global ingredients and culinary traditions.
At The Fulton Table, Kieran works closely with Chef Mark to develop menus and oversee the culinary execution of private dining experiences, corporate gatherings, and celebrations. His approach reflects a balance of classical technique, global perspective, and a deep understanding of hospitality-driven dining.
